Our last compose for F42 was Fedora-IoT-42-20251027.0 , users in the stable stream move to F43 on upgrade

Historically this is how we've always done it (with stable moving to the next release), but I think we also have an opportunity to keep the bootc containers for F42 if there was a need (or request)
